Wine glass size and sales in bars and restaurants

In previous studies (Pechey et. al. 2016, Pechey et. al. 2017, Clarke et. al. 2019) we found larger wine glasses in bars and restaurants increased wine sales but not always, with the overall picture hard-to-interpret.

Combining data sets from five bars and restaurants in England that used wine glasses varying in size from 250ml to 510ml we found that wine sales were 7.3% higher when wine was served in 370ml compared with 300ml glasses and tended to be lower when wine was served in 250ml compared with 300ml glasses. These effects were not seen in bars.

The observed effect in restaurants might be due to restaurants compared with bars selling more wine in bottles and carafes. Larger glasses allow more wine to be poured which may increase how much is drunk.
